Stockholms Bränneri Rhubarb 75

Stockholms Bränneri Pink Gin was inspired by pink summer skies and the Rhubarb 75 is the ideal cocktail to enjoy during those days. 40ml Stockholms Bränneri Pink Gin, 20ml fresh Lemon Juice, 15ml Rhubarb Syrup (recipe below) and Sparkling White Wine. Combine the gin, lemon juice and rhubarb syrup in a cocktail shaker with ice. Shake hard for 5 seconds, pour into a glass and top up with chilled, dry sparkling wine.

To create the Rhubarb Syrup: Combine the below in a saucepan and bring to boil and let simmer for 5 minutes, put in a fridge overnight and strain - 340 grams chopped rhubarb, 2dl water, 2dl cane sugar and 1 vanilla bean.
